Low-Fat Baked Jalapenos Poppers

Happy Tuesday! I hope everyone’s weeks are starting out swell.

Mr. Prevention got me a pretty Valentine’s Day bouquet for Valentine’s Day :-D . I love fresh flowers – they make me so happy! These were a bit wilted after sitting out in the Ohio winter all day long :( , but I think I’ve revived them a bit!

Now that I’m thinking of it and looking at these jalapeno popper photos, it’s ironic Green Bay won — the colors of these jalapeno poppers closely resembles those of the Cheeseheads. Go figure.

This week is INSANELY busy and I can’t believe I am behind enough to have not shared the last of our Super Bowl snackies. Glad I was going through my camera and the photos otherwise these would’ve been forgotten! Shame on me. But here we go!

…And a Corona Light is the perfect way to cool down from these jalapeno poppers…these much lightened-up jalapeno poppers! :-D

I am sooo looking forward to my workout today…and my weigh-in! It’s been a good week. I’ve exercised extreme MODERATION with the Red Velvet Cake with Cream Cheese Frosting and all of the other V-day goodies that have been floating around! :-D

Question: Did you have some chocolate yesterday? :)

I did…just a bit! ;)

  1. I didn’t have chocolate yesterday! How lame is that??? The cookie in my free lunch at work was cranberry walnut (fruit in cookies makes me gag), so there went that… ugh!

    Oh well- it’s not like I don’t have chocolate every other day of the week… :)

    Oh, I should make these for my husband. He loves spicy stuff. And bar type food. I didn’t eat any straight up chocolate but I ate a brownie yesterday.

  5. No chocolate for me yesterday, which is a minor miracle. Those poppers look great. I used to think using the entire jalepeno would be too hot but I saw on The Food Network that as long as you remove the seeds it’s mild enough. Who knew?!

    Now that you mention it, I didnt have ANY chocolate yesterday. My boyfriend knows me well and got me cheese instead. :)

  14. I had a tiny bit of chocolate on the dessert that I had last night. I am impressed you are able to have such self control around red velvet! I have no self control when it comes to red velvet anything!!!
