My friend in Florida sent me this recipe to try, and I can see why 🙂 Seeing as she’s a new mom and a healthy eater, I never questioned her recommendation! Thanks, Kate!
In Midwest news, where the heck did spring run off to? I do believe we had frost last night and I about froze my buns off walking to my car after teaching last night. I’m guessing the leggings and springy dress weren’t the right attire, even with a comfy grannie sweater on over top (it worked, trust me).
I believe I am willing warm weather this way in the way of dill (and dresses). I associate dill with warm summer months because I grew up eating tomatoes with dill, salt, and pepper. My dad is a dill fanatic and I’ll bet he would love this recipe. If you can get fresh dill for this recipe, you’ll be thankful that you did.
And canned salmon. Canned WILD salmon.
Until this recipe, I was unaware canned (wild) salmon even existed. I lead a sheltered life, I suppose. I found this salmon at Trader Joe’s for $2.99/6 ounces. While that isn’t a steal, it’s a fair price and it’s nice to have healthy, non-perishables in stock.
[print_this]Potato Salmon Patties adapted from All Recipes
12 oz canned wild salmon, drained and flaked
1/2 cup egg substitute
1/4 cup dry bread crumbs
1/4 cup dry potato flakes (I used instant mashed potatoes)
1/4 medium onion, minced
1 clove garlic, minced
1/4 tsp dried dill weed or 1 tsp fresh dill, chopped
1/4 tsp celery salt
salt and pepper, to taste
2 Tbsp olive oil
Directions:
In a medium bowl, mix salmon, eggs, garlic and herb seasoned dry bread crumbs, dry potato flakes, onion, garlic, dill weed, celery salt, salt, and pepper. Form the mixture into 2 inch balls, and flatten into patties about 1/2 inch thick.
Heat olive oil in a medium skillet over medium heat. In batches, cook patties about 5 minutes on each side, until lightly browned. Yield: 4 servings, 2 patties each.

Results: These were VERY easy & another 15-minute meal from start to finish. For those that aren’t fond of “fishy” fish dishes, this would be an excellent choice. I topped each salmon patty with a dollop of light mayonnaise that had been mixed with a bit of dijon mustard and a few capers. Mmmm! Enjoy!
[/print_this]I am all packed up and ready to head to work and then to Chicago! This weekend is Easter (obviously), but Sunday is also my dad’s birthday 🙂 My mom and I are going to make him a German Chocolate Cake — his favorite 🙂
I’m anxious to see my family and my brother who I haven’t seen in quite some time! And my Grannie who just got out of the hospital. Today can’t go fast enough! 😀
Question: Have you ever had a salmon patty?
See ya in the Windy City,
Mmm… I’ve never actually had canned salmon before! Too addicted to the fresh stuff ๐
Author
Me too! But it is a bit more cost effective ๐
My grandma has made them for me. I think she used oatmeal, salmon and spinach. She sort of eats like a healthy food blogger!
Author
She sure does! Rock on, grandma!
I love salmon patties and always have TJ’s wild canned salmon in my pantry. I’ve never added mashed potatoes, but it sounds like a great idea!
Have a safe trip to Chicago, and enjoy your family!
HAve a safe trip! And…save some german chocolate cake for me ๐ Ohhhh that’s a great cake.
I haven’t made salmon patties in ages (Nick hates salmon, what a baffoon). I can’t believe TJs sells canned wild salmon!! Brilliant.
Author
Whaaaaaaaat?! With all the adventerous things Nick enjoys, I can’t believe salmon isn’t one of them!
These look delicious!! Definitely bookmarked! ๐ Thank you for telling me about the TJ’s wild salmon – so exciting! Also, thank you for the head’s up about the cold weather – we’re moving to our new apartment in Dayton tomorrow, and I’m currently dressed for 80 degree weather, so I’m going to run put some sweaters in the easy access pile! Thank you again! You saved me from freezing! ๐

Oh yes! Pack warm…it is not enjoyable here. Bring some sun with you! Please? Please? ๐
These look so yummy! Do they taste fishy? That’s my only fear with ‘fish cakes’.
Author
Nope, not fishy at all!
I didn’t know that Trader Joe’s carried wild canned salmon…. I will definitely stock up on some this weekend. My husband and I love seafood and have had pretty much every kind of patty we could get our hands on. I am definitely going to make this.
Have fun in Chicago with your family!! ๐

Then he will love these! ๐ Thank you! I’m very excited to get on the road already!
that looks yummy! I have a recipe for salmon patties…with an asian taste twist, just haven’t made it to my blog yet! I did not know wild canned salmon existed either! On my list of things to pick up next time I go to TJ’s! ( it’s getting to be a pretty long list too…I might add!)
I know…spring….ugh. I can’t take this anymore. It is so depressing. I have gotten to the point where I am convinced winter is just never going to leave! Grrrrrrrr……
Have fun with family and enjoy the weekend, Nicole!

I bet! Do you guys have a TJ’s close? If not, let me know and I can stock you up!
Your dad and I share April 24th as our birthday! Happy birthday to him!
I always try to keep canned salmon on hand for quick meals like that. The potato flake is unique, but sounds delish!
Author
Aw! I do think I recall that from last year :O) Happy early birthday to YOU!
This looks good, very similar to the Salmon Croquettes my grandmother makes. So, yes, I’ve eaten salmon patties before!
Author
Croquettes sound so much more posh! ๐
I love dill. And I especially love dill on salmon. These sound good, though I’ve never had salmon patties before.

I hate to say this, but I am not the biggest fish person. Mostly for the fishy fish taste you were referring to.
I am trying to work on different recipes to try out because it is nice to have another protein option to throw in the mix. I want to give these a try since you said they aren’t too fishy. From the picture, they look excellent!
Author
Not fishy at all, I think they’re worth a shot!
Yum..these looks simply irresistible..Love those pics..
Have a safe trip to Chicago..have fun and enjoy your weekend with family..btw, advance birthday wishes to your dad..Take care!

Author
That combo sounds DELISH! Enjoy!!
You and me both. I never knew WILD canned salmon existed too! Thanks for letting us know…I’ll have to check that out at TJs, as the price is pretty fantastic. I think you could also make a hash out of those potatoes and canned salmon!
wonderful recipe.. so inviting.. bookmarked !
Hi Nicole! I’m happy to be home and catching up on my blog reading — I missed you, girl! These look seriously delicious, bookmarking now! Hope you have a safe trip and a wonderful Easter!

I MISSED YOU! ๐ Happy Easter to you!
I am 69 and I have been eating salmon patties for almost my entire life. I am pretty sure that ALL canned salmon is wild. Just look at the different cans in the supermarket and you will see the word wild there. If you are truly into the salmon patty you should try the “red” salmon. It is more money but is considered the top of the line in the salmon world. I make them mashed with bread crumbs, chopped onion, garlic powder and lemon juice. Personally I love the left over ones the next day because I think they taste best cold or at room temperature. I love your site!!!!
Mmmm! This look yummy and give me a great idea for gluten free version of crab cakes I’ve been wanting so much lately!
I just tried these and they are WONDERFUL! I will admit I was nervous flashing back to the bricks my mom called salmon patties, but these are nothing like them! I topped them with some Cilantro and Chive Yogurt dip from TJ’s – I can’t believe how many uses it has. Definitely going to stock up on salmon – thanks!!
Also, I found wild salmon at Kroger, a southern grocery chain

Brandy, I’m so glad these were a hit! They have definitely been my favorite recipe for salmon patties…I think it’s the potato flakes ๐
