Thai Peanut Pumpkin Hummus

I love hummus and it’s been on my “Bucket List” of things to make for considerably too long. Like, 2 years too long. If not longer. And of course it’s so EASY to make! My mom and I ate hummus after our killer workout on Saturday while my dad, disgusted, protested that he “doesn’t like bird food!”. Whatever, pops. Your loss.

I’ve had intentions of making hummus at home. I even purchased tahini in Chicago last weekend in preparation. Once returning home and searching my recipe collection for hummus, “peanut” and “pumpkin” caught my eye. Love, and love. Sold. And strangely enough, this recipe didn’t call for tahini. Figures. By the way, did you know tahini is ground sesame seeds? I just learned that. Don’t make fun of me…

Anyways, tahini is not cheap and sometimes it can be hard to find. Chili garlic paste, on the other hand, was at my Kroger in the ethnic foods aisle and was just over $2. It’s also really, really good so I’m sure I’ll be using it in the future. So if you’re a hummus lover, hummus virgin, homemade hummus virgin, out of tahini, or you’re just totally intrigued by this recipe, you should make this! Now!

Thai Peanut Pumpkin Hummus from Cara’s Cravings (link no longer available)

1 can chickpeas, drained, rinsed, and peeled*
1/4 cup (64gm) all natural peanut butter
1/2 cup (120gm) pumpkin puree
2 Tbsp water
1 tbsp chili garlic paste
1 tsp ground ginger
2 large scallions, chopped (white and light green parts only)
2 tsp lime juice
1/2 tsp salt
1 Tbsp chopped cilantro

Directions:

Combine all ingredients in a food processor, and process until smooth. Yield: about 15 1-ounce (2 tablespoon) servings. Store tightly covered in refrigerator for up to one week.

*Peeling the skins from your chickpeas will result in a much smoother, creamier hummus. If you lightly squeeze each been between your thumb and pointer finger, the skin easily slides off and can be discarded.

Nutrition Information (per ounce): 56.9 calories; 2.5 g. fat; 0 mg. cholesterol; 167 mg. sodium; 6.9 g. carbohydrate; 2.1 g. fiber; 2.6 g. protein

Result: Holy…yum. Cara’s creations are amazing, and this is no exception. This is on the spicy side, so if you prefer something more mild, I would start with 1 teaspoon of chili garlic paste and adjust to taste. Of course I loved this as is as I love things spicy, spicy, spicy! I ate this on pitas for lunch and it was very filling and so full of flavor! ENJOY!

Yesterday was STUNNING in central Ohio (I had a whole 4 students show up to class last night…)! I lesson planned outside at a picnic bench over my lunch break and I had freckles emerging all over my face and arms. It felt SO good to be out!

I was home by 4pm and decided to fill my planters with soil and get a few things planted. Unfortunately, everything I started indoors has died. I started things too soon and they just didn’t have enough nutrients to survive off of for so long. Oh well. I look forward to finishing my planting this weekend! Eggplant, poblanos, zucchini, and tomatoes in planters and all of my herbs — rosemary, basil, sage, oregano, parsley, and cilantro — will be in our landscaping, scattered throughout. I know this is probably a faux pas in the landscaping world, but a girl can only have so many giant planters in her terra cotta empire! 😉

As much as I love hummus and pita, a hummus, avocado, tomato, lettuce, and balsamic vinegar sandwich is the best!

I am off to an all-day kidney conference! I’m excited! 😀 Nerd alert!

    I LOVE hummus and make it fairly often. It’s so easy to make! My favorite way to use it is as a condiment on a sandwich or as a dip for pita chips and veggies. Yum!

    If you can find an Arabic grocery store then tahini will be cheaper there than your normal grocery store. Sometimes at my grocery store all I can find is the organic stuff but at the Lebanese store I get standard tahini and it’s not too expensive (about 5-6 dollars for a kilo).

    I usually buy Alkanater brand.

    The last ingredient in my cabinet right now is a can of pumpkin, and I’ve been wondering what to do with it. I just made some hummus, and I should’ve thought to put this in it! This sounds right up my alley though, so I’ll definitely keep this in mind when I finally get around to using it. I just got rid of the last of my tahini too, so this is perfect!

    it was beautiful yesterday, wasn’t it? Soaked it up too….so few of these days to enjoy this year.

    You probably didn’t start your plantings too early, the weather just hasn’t been very cooperative this year to allow the transition of the seedlings to be planted outside in enough time. I mean, its the middle of May, and we are just now getting a few 60 degree days…that is insane. Not to mention the soil is soaked. I put herbs in my landscape as well as in planters! Just don’t put mint in your landscape…or it will take over the entire bed! My chives and oregano come back every year. Most herbs are perennials anyway…so they will come back every year for you if they are in your landscape!

    yes, I do love hummus. Can you get Sarah Cuisine brand down there? Its made here in the Cleve area….all their hummus is wonderful and only 1p+ for one oz. I just bought some baba gannough ( I know it’s spelled wrong) but OMG…soooo good.

    This sounds amazing. Never in my life would I think to mix those things together, but it sounds like it would actually work.

    I love hummus, I like to use on my pizza instead of pizza sauce. It tastes good, and helps fill my belly.

    I love hummus! I just made some this past week but I could not find tahini so I made my own by toasting sesame seeds then blending them in my food processor with olive oil till smooth. I don’t peel my chickpeas just blend them for about 10 minutes and they will be totally smooth. I’m looking forward to trying it with pumpkin thanks for sharing the recipe.

    grrr hummus is not bird food! haha It’s literally one of my favorite dips or spreads! I feel like I could eat it every day and a few years ago I did! I’m not sure if I would like this twist on hummus though…I don’t like spicey and I pretty much dont stray from original, garlic, or roasted red pepper hummus!

    I love hummus but don’t have it very often because I’m horribly allergic to tahini.

    I have made hummus before but need to try peeling the skins off the chickpeas. My big complaint about not using tahini is the hummus is not as smooth. I’m hoping no skins will help!

      It really is creamy. I may try not peeling them next time and just processing them for longer but I have heard the skin tip from several places. Reader above says differently so who knows! It may depend on the quality if the food processir, too. Who knows ๐Ÿ™‚

    I love that you added pumpkin puree to the hummus! Yum!
    This looks amazing! My dad is the same way. I did make something a bit on the lighter side for dinner for him one night when my mom was out of town. Surprisingly he loved it!

    I love hummus, but pumpkin to me is just – eeehhh. but I think that’s because they always try to make pumpkin sweet with nutmeg or cinnamon, two other flavors I’m not fond of. I might like this since it’s not sweetened with either or those. I like pesto or curry hummus! yum!

    What a nice different combination for hummus! I like making my own as well and it is so easy and fast.

    I like it on pita bread, with my healthy version of falafel patties, with veggie dippers or on AkMak crackers.

    Great recipe! I adapted it a bit…no chili paste, double the amount of peanut butter, and lemon juice instead of lime because I was too lazy to go to the store. It’s delicious and – bonus – since it’s not spicy I think my kids might even try it because they love all things PB and pumpkin.

    I have started to make hummus at home and it’s super easy, but I still find my favorite is served at this Middle Eastern restaurant in my hometown. Simple and basic is how I like my hummus – with fluffy whole wheat pita bread (warmed)

    I am sorry to say that this one was not a winner at our house. We love hummus too. I think it was the peanut butter that we didn’t care for. ๐Ÿ™
