Meatless Monday: Spinach and Artichoke Stuffed Portobellos + Weekly Menu

stuffedportabellos1 Today and this week will be a shock to the system.

No cigarette smoke. More exercise. It’s a miracle I got in a run while in Vegas – our hotel didn’t have a workout room (!?) and it was cold, overcast, and rainy much of the weekend.

I am going to be eating things that are green and filled with fiber and nutrition…and don’t contain an abundance of butter and heavy cream like the pesto mashed potatoes they serve at the Bellagio. Sigh.

stuffedportabellos3 I’m going to sleep. Or try to, at least. Because a weekend with a 3-hour fall-back leads to very, VERY late nights and very little sleep. My body is completely confused.

I’m going to do laundry because even though I took twice as many clothes as I needed to…they all smell of smoky Vegas casinos.

I’m going to cook because I haven’t been doing much of that. My recipes in queue have dwindled to a whopping 1 and Mr. Prevention will be accounted for every evening this week. Healthy family dinners, here we come.

Lily1 Because, per the usual, any flight I’m on gets delayed and we spent much of yesterday in the Vegas airport instead of doing things like grocery shopping, laundry, exercising, etc. And of course, by the time we landed, Lily’s daycare was closed and I won’t be able to pick her up until after work :(

At which point she will be so sleepy from 4 days of play time that she won’t want to play soccer in the backyard like we’ve been doing, but instead, she’ll want to sleep and cuddle. And I will want to join her. Instead of working out. Or cooking.

But I know that getting back into the swing of things is a good thing. Veggies, and workouts, and normalcy.

 Weekly Menu: April 16th – 19th

I think this week is going to be fairly calm. I should probably knock on wood, but I am very anxious for a slower pace this week and having Mr. Prevention home…and both of us staying put in Ohio for a few weeks.

Michele, Katie, Heather and Eva each won Bob’s Red Mill Hard White Whole Wheat Flour and Whole Wheat Pastry Flour.   1. Glad you enjoyed your trip! I can remember taking a road trip to a casino in Indiana one year and coming back feeling as though I needed to take a 5 hour shower. The smell of smoke was nauseating. Blah.
    Are we still on for our Friday night date?!
    Great recipe, btw, I’m really into portobellas now because I learned that Nick will actually eat them. I never thought he would…. wahooo!! He loves them.

  2. Pesto mashed potatoes? Sounds fabulous to me, although I can totally see why you’d want to “get back on track” after indulging in Vegas. This mushroom looks delicious – I love stuffed mushrooms, but never saw one stuffed with artichokes. Yum! :-)

  3. Isn’t it funny how when you get home from a vacation you crave that healthy food and getting back to a routine. It’s always nice to take a break but getting back to it can be fun too!

  4. Vegas does do a fantastic job (compared to most bars/clubs that allow smoking inside) of venting out the smoke, but I agree- you still come home with that “vegas smell”. ha ha

  5. umm can I come to your house to eat this weekend? Great weekly menu. My husband and I have been playing around with the idea of going meatless for a while, but I feel like I need more recipes under my belt to do that. Thanks for sharing, I will be keeping this one in mind!

  6. It’s always so tough to get back in the swing of things after vacation.
    I always feel like I need a day just to do laundry, catch up, etc.

  8. So did you have an awesome time in vegas?? I’m guessing that since it’s “back to the grind” you didn’t hit the jackpot on the slots?
    I’ve been to Vegas a few times but I’m not much of a gambler. I liked staying at Mandalay Bay the best because the pools gave me something to do other than gamble and eat. (Actually when I stayed there I was under 21 so I couldn’t gamble anyway).

    These sound delicious and I don’t even like mushrooms. I bet this would be good stuffed inside a tomato though. I think I’ll try that.

  13. When I was in Vegas, our hotel had a gym…with a ridiculous fee to use it. My husband and I ran some stairs…and gave up running along the strip and dodging the crowds. I like to think I get enough of a workout in all the walking there anyway! PS: Love this healthy spinach and artichoke recipe!
