Herbed Sweet Potatoes with Feta

 Now that Thanksgiving is behind us, some of the season’s best produce is still bountiful…cheap…and healthy! Yes, I’m talking about sweet potatoes, among other things. Brussels sprouts, anyone? Yum.

After the praises I sung for Sweet Potato Coins with Gorgonzola and Bacon, this recipe caught my eye. I finally got settled in with my new cookbooks last weekend and this was the first on my must-make list. With sweet potatoes on sale and people turning on their best behavior food-wise, this dish is perfect for holiday meals, a classy Super Bowl side, or…just because.

These Herbed Sweet Potatoes with Feta are thick-cut sweet potatoes seasoned with thyme and roasted with feta and pine nuts. Simply divine!
