BBQ Chicken Drumsticks

Has anyone seen my motivation? No, seriously. It has gone missing.

I ran a 5K last weekend in under 30 minutes – quite the accomplishment for me, and ever since, the last thing I want to do is workout. I managed a workout yesterday, however, between the farmer’s market marketing for the hospital and serving up a recipe (that was soooooooo good it will be making it onto the blog in due time), and returning to the hospital for our last parent-child cooking class. Between the two activities, I ran home for not only that dreaded workout, but also for a cookbook recipe creation and photo shoot, as well as a quick check-in with my staff. Twas a busy day indeed and I finally hit the door for good around 9pm and with 18,000 steps logged on my pedometer (my Jawbone UP, anyways).

Dinners lately have been ready in minutes.

I don’t know if anyone else has noticed, but sadly, the days are already beginning to get shorter. The mornings are dark and the sun no longer beats me out of bed every morning. The evenings are stealing the sun away earlier and earlier every day and as much as I love fall, I just can’t help but feel a little robbed of summer. I haven’t had an actual beach day in weeks and 90 degree temperatures are a thing of the past. As in, a thing of June and none since. What’s up with that?

Pumpkin, chili, and football can hold off just 3-4 more weeks. Really. Truly. Pretty please?

Way back in the day when I was losing weight, I would often request these BBQ chicken drumsticks from my mom. I remember her somewhat begrudgingly removing the skin, as it isn’t exactly an enjoyable task…but certainly makes the chicken drumsticks a whole lot healthier. Plus, you then get to enjoy the BBQ sauciness…without the guilt of the skin. Win-win in my book.

Is this a recipe? Well, that probably depends who you ask. But it was certainly a meal in my house. Sometimes, the simplest, most enjoyable recipes are often over-looked, and that need not be the case. Simple can be absolutely divine!

BBQ Chicken Drumsticks

Classic and healthy. These are sure to please!
Ingredients
  • 1¼ lb (about 5) chicken drumsticks, skin removed
  • ½ cup barbecue sauce, divided
Instructions
  1. Preheat grill to medium-high heat.
  2. Brush drumsticks with ¼ cup barbecue sauce, coating all sides. Once grill is hot, transfer the drumsticks to the grill and cook 5-6 minutes per side, flipping once. Baste chicken with remaining ¼ cup barbecue sauce 2-3 times during cooking. Serve hot.

    Totally making this for dinner tonight. I have baked potatoes in the oven (I put them in the oven in the morning tossed in olive oil, salt and pepper, then ask my husband to turn on the oven at 5:00 so they are ready by the time I get home – super crisp potato skins that way!).

    I recently made a copycat bbq sauce from Rudy’s bbq in Austin – my husband and I finally agreed on a bbq sauce we both love (although I think it should be spicier!). BBQ legs would be perfect with baked tots. Yum!

    I still don’t know how you find the time to do all you do!

    Nicole I feel the same way about being robbed of summer! It was in the 60′;s here in upstate NY yesterday we had a week and a half of a 90 degree stretch and that was it.What gives is correct. I want summer.

    Simple definitely makes some of the best recipes! I also hate removing the skin from chicken. I hate touching raw chicken to begin with and removing the skin requires getting all up in its business. Oh well, it is worth it in the end!

    I’m getting bummed about the shorter days too. It’s always at the end of summer that I feel like I wasted so many daylight and twilight hours inside when I could have been out doing something, anything. (then I remember the evening mosquitoes and I feel a bit better about myself)
