Meatless Monday: Teriyaki Tofu and Pineapple Kebabs + Weekly Menu

One of my patients is currently trying to eat meat-free once a week.

While he isn’t able to verbalize his reasons for doing so, his nephrologist questions his motive every month during rounds. The patient gives the same, very vague answer every month. Together, the patient and I review the best vegetarian options given his lab work and we move on. Clearly, the physician challenges the patient’s decision…for whatever reason. I would hope a physician would support a diet with more antioxidants, fiber, and nutrients!

Per the usual, my co-workers gawked over my leftovers when I pulled out these skewers one day for lunch.

I was asked, “If you’re not vegetarian, why do you eat tofu?”

The simple and quick answer is that I actually like tofu. A lot. Plus, a pound of tofu runs me about $2, whereas chicken costs closer to $4/lb. Cost aside, vegetarians have lower cholesterol levels, healthier weight statuses, lower rates of cancer, lower blood pressure, and they live longer than their omnivore counterparts.

But I figured that was a bit too preachy and intense for the casual lunch time chat.

In retrospect, I regret not sharing those facts in some capacity. While I fully realize that a “teaching moment” has to be done in the right way and at the right time, I do think I could’ve worked in some basic facts on the benefit of eating meat-free. Though, I’m not likely to part ways with meat entirely.

While the blogosphere is saturated with nutrition and healthy eating bloggers, we have to remember it is still a small group of the population that goes to such lengths to educate themselves about health and wellness in terms of food…or even care, for that matter. Helping others learn from our choices is one great way to educate on the powers of food and nutrition.

The next time my coworkers interrogate my lunch…I have answers! ;)

Meatless Monday: Spinach and Artichoke Stuffed Portobellos + Weekly Menu

stuffedportabellos1Today and this week will be a shock to the system.

No cigarette smoke. More exercise. It’s a miracle I got in a run while in Vegas – our hotel didn’t have a workout room (!?) and it was cold, overcast, and rainy much of the weekend.

I am going to be eating things that are green and filled with fiber and nutrition…and don’t contain an abundance of butter and heavy cream like the pesto mashed potatoes they serve at the Bellagio. Sigh.

stuffedportabellos3I’m going to sleep. Or try to, at least. Because a weekend with a 3-hour fall-back leads to very, VERY late nights and very little sleep. My body is completely confused.

I’m going to do laundry because even though I took twice as many clothes as I needed to…they all smell of smoky Vegas casinos.

I’m going to cook because I haven’t been doing much of that. My recipes in queue have dwindled to a whopping 1 and Mr. Prevention will be accounted for every evening this week. Healthy family dinners, here we come.

Lily1Because, per the usual, any flight I’m on gets delayed and we spent much of yesterday in the Vegas airport instead of doing things like grocery shopping, laundry, exercising, etc. And of course, by the time we landed, Lily’s daycare was closed and I won’t be able to pick her up until after work :(

At which point she will be so sleepy from 4 days of play time that she won’t want to play soccer in the backyard like we’ve been doing, but instead, she’ll want to sleep and cuddle. And I will want to join her. Instead of working out. Or cooking.

But I know that getting back into the swing of things is a good thing. Veggies, and workouts, and normalcy.

 Weekly Menu: April 16th – 19th

I think this week is going to be fairly calm. I should probably knock on wood, but I am very anxious for a slower pace this week and having Mr. Prevention home…and both of us staying put in Ohio for a few weeks.

Crisp Salmon with Braised Red Cabbage and Mustard Sauce + GIVEAWAYS!

A quick post before we are en route back to Ohio. Vegas has been a blast, but a few days in Vegas is plenty. Between the smoke-filled casinos and my lack of blackjack luck, it’s time. We did get to eat at Bobby Flay’s Mesa Grill last night and wow, the food was fantastic!

I must say, however, I’m anxious to get back in the kitchen and eating lighter (and cheaper!) homemade fare.

This dish, in particular, would fit that bill perfectly. Would this recipe normally catch my eye? No. But it was talked so highly of (I can’t remember by who – please let me know if you’re reading this!), I had to give it a shot. And salmon is usually a sure bet in my house.

Not only do Mr. P and I go ga-ga for salmon, but Lily enjoys the salmon skin that makes her coat nice and shiny :) I love how simple and healthy this dish turned out. Perfect weeknight dinner!
